Our teams have been asked to share their summer BBQ recipes. As we get closer to summer, we hope the warmer weather is on it’s way and we can’t wait to try these…
These are an all-round favourite due to the versatility! Choose your meat and vegetables or all vegetables if you’re vegetarian. Slide each ingredient onto the skewer, lightly brush with oil and season to your liking. Grill for around 15 minutes depending on your food choices. This is a great recipe for group BBQ’s as everyone can enjoy their own creation!
Marinade your chicken in a mixture of salt, pepper, basil, garlic and peri peri seasoning and place in the fridge for an hour before cooking. As you take it out the fridge add salt the skin just before cooking to make it crispy.
This is best to do with a whole chicken, or chicken on the bone. Cook with the BBQ lid down for 30 minutes making sure it is cooked through. Serve with salad on the side for a light summer meal.
Start by making a mixture of honey, butter and harissa seasoning in a bowl, heat slightly so the butter is melted and reserve half of the mixture. Pour one half over the chicken and marinade in the fridge for 1 hour. Place onto your hot BBQ and cook with the lid closed for 30 minutes. Once crispy and cooked through, serve with cous cous and roasted veg and a drizzle of your reserved mixture on top.
It can be easy to forget fish on a BBQ but for those warm summer nights it is a great alternative to meat. Add a hot plate onto your BBQ and lightly brush some oil over it to cook your prawns in. When the prawns are nearly done add some garlic and butter for that perfect Mediterranean dish.
For a side to any of the above dishes for your BBQ a large bowl of these potatoes is a dish everyone will dip into!
Start by peeling your potatoes and cutting them into small cubes. Drizzle with olive oil, garlic powder, mixed herbs and place in a large pan on the hob or BBQ. Cook on a medium heat and stir regularly so the potatoes are soft, then serve and enjoy.
