Give your brunch a boost with these indulgent tiramisu pancakes. Mix 150ml double cream with 50-75ml sweet dessert wine or sherry to taste, then whisk together until thick. Melt 50g dark chocolate and set aside. To serve, spread 4 pancakes with the cream, then fold. Drizzle each one with 1-2 tsp freshly-brewed espresso coffee and the melted chocolate, and dust each with a pinch of cocoa powder.
Apple and Cinnamon
Transform your pancakes with a warm apple and cinnamon topping. It’s the perfect way to enjoy the last bite of winter before spring arrives.
Take inspiration from Turkey and channel the flavours from this traditional pastry into your pancakes. Chopped pistachios, a dash of rosewater, cinnamon and honey make this a syrupy sweet pan-klava treat and a change from the traditional.
Jam & Cream
A scone loaded with jam and cream is a classic British dessert, so why not add a twist to the sweet delight and try it as a pancake topping instead? And a generous layer of strawberry or raspberry jam to your pancake stack, and top with a dollop of clotted or whipped cream.
Give your pancakes a breakfast or brunch twist, and top with a poached egg and hollandaise sauce. You can add a couple of slices of streaky bacon too, if you want something extra indulgent.
A tasty twist on the traditional pancake recipe, why not try a savoury pancake mix and fill with a selection of chutneys and pickles, garnish with fresh coriander and a squeeze of lime juice? Quirky and simply delicious.
